Founder's Letter - Why did we choose specialty coffee?

When I first envisioned AlmAméricas, I didn't just think about products. I thought about stories, faces, hands, and territories . I thought about everything Latin America has to offer the world when it is listened to attentively. And on that journey of discovery, coffee always emerged as a natural bridge between cultures, a universal language that unites people without the need for translation.

But not just any coffee.
Specialty coffee.

I want to tell you why.

- Coffee as an act of dignity

In many Latino homes, coffee isn't just a drink. It's a ritual. It's the pause where the family comes together. It's the aroma that announces the start of the day and the conversation that ends it.

But behind that ritual lies a silent truth: for decades, producers have received unfair prices and have been the last to benefit from the fruits of their own labor.
The traditional commercial chain leaves the coffee farmer with minimal margins, without any real possibility of growth or stability.

Specialty coffee changes this story.

By working with producers who take care at every stage—and who receive significantly higher pay for their dedication—the economic impact is immediate:

-What makes specialty coffee "special"?

The Specialty Coffee Association (SCA) classifies coffees on a scale of 0 to 100 points , evaluating:

  • Scent

  • Flavor

  • Sweetness

  • Acidity

  • Body

  • Uniformity

  • Balance

  • Cup cleaning

  • Absence of defects

Only coffees with a score above 80 points can be considered specialty coffees.
It's not a marketing title. It's a certification of excellence.

To reach that level, the process must be almost surgical:

  • Hand-selected ripe cherries

  • Natural, washed or honey fermentations carefully controlled

  • Slow drying in the sun on raised beds

  • Threshing that prevents fractures and defects

  • Precise, artisanal roasting adapted to each batch

Each phase is an act of intention.
There are no shortcuts, there is no industrialization.
Just dedication, technique and love for the craft .

-The true taste of coffee

Those who have tried specialty coffee for the first time usually say the same thing:
"Is this coffee too? I didn't know it could taste like this."

And it's true.
Commercial coffees, dark roasted and blended, hide defects and homogenize the flavor.
Specialty coffee, on the other hand, reveals the identity of its origin :

  • Floral or fruity notes

  • Hints of cocoa, panela or honey

  • Bright acidity, complex but elegant

  • Silky or juicy body

  • Clean and lingering finish

Each cup is a sensory and cultural experience.
A window to the mountains where he was born.
